500 g oyster mushrooms, 1 medium-sized onion, 5 tbsp oil, 1 tsp salt, 1 pinch of pepper, 3 bay leaves, 1 tsp oregano, 1 tsp marjoram, 0.5 tsp sugar, 80 g tomato paste diluted with 2 dl water, 100 g feta cheese, 800 g pizza dough
Chop the onion and dice the oyster mushrooms. Sauté the onion over medium heat until wilted. Add the mushrooms and sauté together until the onion is translucent. Remove from heat. Add the diluted tomato paste, salt, pepper, sugar, bay leaves, and the rest of the spices to the skillet. Bring it to a boil, then simmer over low heat for 10-15 minutes until it thickens to a creamy consistency. Set aside to cool. Roll out the pizza dough into 2 rectangular shapes, each about 40×30 cm. Spread the cooled sauce evenly over the dough, then sprinkle with the finely chopped feta cheese. Roll up the dough along the longer side, making sure to roll tightly to prevent the filling from spilling out during slicing. Slice the roll into 1 cm thick swirls. Place the swirls on a greased baking sheet and bake at 180°C for 13-15 minutes until the dough is golden brown. They are ready when the pastry is nicely browned. Serve hot or cold.
