100 g Mangalitsa bacon, 6 chicken thighs, 6 cloves of garlic, 10-12 allspice berries, salt, lemon pepper, 1.5 dl aromatic white wine, 1 dl water, 200-220 g pitted sour cherries, 300 g small oyster mushrooms
Cut the bacon into small cubes and sprinkle it on the bottom of a large roasting dish. Skin the chicken thighs, season with salt, pepper, and pierce them with cloves. Place them on top of the bacon. Pour the wine and water over the chicken, cover with foil, and bake in a preheated oven at 200°C for 45 minutes. Remove the foil, sprinkle the sour cherries and oyster mushrooms over the chicken. Cook for another 35-40 minutes, turning the chicken to brown on both sides while the sauce thickens. Serve with mashed potatoes.
