Oyster Mushrooms Roasted in Duck Fat

Ingredients

400 g duck fat, 500 g oyster mushrooms, salt, pepper, chives

Preparation

In half of the duck fat, sauté diced oyster mushrooms until golden brown. Season with salt and pepper. Transfer the mushrooms to a glass container and pour the remaining duck fat over them. Refrigerate once cooled.

Serving

Serve with toast, garnished with finely chopped fresh chives.
