400 g oyster mushroom, 4-5 tbsp olive oil, 100 g goat cheese, ¼ red onion, ½ tbsp coarsely crushed pink peppercorn, salt
Heat a little olive oil in a skillet, then fry both sides of the oyster mushroom caps in the oil until golden brown. (Place only as many mushrooms into the skillet at once as fit comfortably next to each other and are easy to turn.) Transfer the crispy mushrooms to an ovenproof plate, season with salt, then dice the goat cheese over the top. Bake at 180°C for 15 minutes. Remove from the oven and sprinkle with finely chopped red onions and crushed pink peppercorns. This dish pairs excellently with white wine, but it can also be served as a unique breakfast option.
