1000 g beef leg, 250 g oyster mushrooms, 150 g Mangalitsa bacon, 1 large onion, salt, pepper, 1 tsp caraway seeds, 1 tbsp paprika, 2 bay leaves, 2 dl red wine, cooking oil
Wash the beef, pat it dry, and cut it into cubes. Finely chop the onion and cut the bacon into small cubes. Fry the bacon in a little oil until it releases fat, then add the chopped onion and sauté together until golden brown. Add the cubed beef and cook until it whitens. Remove from heat, sprinkle with paprika, then season with salt, pepper, caraway seeds, and bay leaves. Add enough water to cover the meat. Let it simmer covered for about one and a half hours, checking and adding water if necessary. When almost done, add the chopped oyster mushrooms, pour in 2 dl of red wine, and cook uncovered for another 10-15 minutes until the liquid reduces.
